The Denver steak is a tender, juicy cut of beef taken from the under-blade section of the chuck primal (shoulder area). Despite coming from a hardworking part of the cow, this steak is surprisingly well-marbled and flavorful, making it one of the best-kept secrets in the butcher’s case.

With a rich, beefy taste and a fine grain, the Denver steak is ideal for grilling, pan-searing, or sous vide, and shines when cooked to medium-rare or medium. It’s versatile enough for weeknight meals yet elevated enough for steak night. Steak weight is around 9oz.
